Scallops

1 cup chopped tomato

1 cup sliced onions

1 cup cubed avocado (1 avocado)

1 cup chopped cilantro

6 Tablespoons lime juice (2 limes)

1 Tablespoon olive oil

salt and pepper to taste

1 pound scallops


Combine all ingredients except scallops in saucepan and bring to a boil.

Add scallops, reduce heat, and simmer for 2 minutes.

Drain and refrigerate for 2 hours.

Cut scallops into 1 inch pieces.  Serve mixture in cocktail glasses.
