Scallops Recipe


Scallop Ingredients
  • 1 cup chopped tomato
  • 1 cup sliced onions
  • 1 cup cubed avocado (1 avocado)
  • 1 cup chopped cilantro
  • 6 Tablespoons lime juice (2 limes)
  • 1 Tablespoon olive oil
  • Salt and pepper to taste
  • 1 pound of scallops

Scallop Instructions
  1. Combine all ingredients except scallops in a saucepan and bring to a boil.
  2. Add scallops, reduce heat, and simmer for 2 minutes.
  3. Drain and refrigerate for 2 hours.
  4. Cut scallops into 1-inch pieces. 
  5. Serve mixture in cocktail glasses.
