Scallop Ingredients
- 1 cup chopped tomato
- 1 cup sliced onions
- 1 cup cubed avocado (1 avocado)
- 1 cup chopped cilantro
- 6 Tablespoons lime juice (2 limes)
- 1 Tablespoon olive oil
- Salt and pepper to taste
- 1 pound of scallops
Scallop Instructions
- Combine all ingredients except scallops in a saucepan and bring to a boil.
- Add scallops, reduce heat, and simmer for 2 minutes.
- Drain and refrigerate for 2 hours.
- Cut scallops into 1-inch pieces.
- Serve mixture in cocktail glasses.
