- 2 cups diced watermelon
- 1/2 yellow bell pepper, diced
- 1/4 cup chopped onion
- 1 Tablespoon fresh chopped cilantro
- Juice of 2 limes
- Salt and pepper to taste
- 4 tilapia fillets
- Combine all ingredients except tilapia in a bowl.
- Refrigerate the mixture for 1 hour.
- Salt and pepper tilapia, and broil or grill until fish flakes.
- Serve with the refrigerated mixture.
